Chefs of the Future

Chefs of the Future is a multi-partner project, now in its third year with Climate Action Fife, funded by the National Lottery. Partners Greener Kirkcaldy work with our Culinary Arts Students and lecturers to introduce students to tasty low carbon and plant-based ingredients, providing the hands-on technical skills required to turn them into delicious dishes.

The workshops are part of wider learning around the role of food in tackling the climate emergency, and how we can adapt menus to offer ‘climate friendly food’ without sacrificing taste and texture. Dishes are researched, created and cooked by our students, tested at events and in our first-class trainee restaurant, The Academy, with a prize for the best.

The recipes are published and made available to the wider community through Climate Action Fife.

Top 3 Learnings

  1. Organising a workshop on adapting menus to plant-based foods prior to kitchen-based work is beneficial.
  2. Plan ahead and put time aside for this type of training alongside curriculum requirements.
  3. Allowing students to design a plant-based menu demonstrates the skills they have developed.
